Beet and Strawberry Red Velvet Cake Smoothie with Cacoa Nibs and Maca

The title should say it all, but if you you can't get down with a Red Velvet Cake smoothie...well, we are at a loss.


This particular recipe gets it's bright rich red color from one of our favorite super foods...beets.  For the athlete, beets have great science around them for helping to increase blood flow.  For everyone else...they are just a great healthy food to incorporate into your diet from time to time (or as often as you can).  When we use beets in our smoothies, we always bust out our heavy duty blending machinery i.e. our Vitamix.  It blends raw beets down to a silky puree, and saves us from having to peel the beets...a waste of time and nutrition as far as we are concerned.  Just toss the whole beet (top trimmed, of course) in a capable blender and you are good to go.

Strawberries are a smoothie stand by...and may not seem like they pair with beets - but they do!  Strawberries are particularly rich in the antioxidant vitamin C, great for recovery and day to day health.

Two other superfood powerhouses in this recipe are cacao nibs (sub cocoa powder if you need to) and maca.  Cacao, a substantially less processed and treated form of what we all know as cocoa (subtle difference) is packed with antioxidants, and is also rich in minerals such as iron, magnesium, phosphorus, zinc, copper, and manganese. 

Throw in a banana for a little sweetness and a little texture, and if you are using this smoothie as a post-workout recovery smoothie, a little honey is a great touch and adds a few extra "good carbs."

Garnish with cacao nibs (great crunch!), coconut, mint, or anything else you'd like to pretty it up!.

Beet and Strawberry Red Velvet Cake with Cacao and Maca

-2 scoops Primo Smoothie

-12-16 oz milk of choice (we used unsweetened vanilla almond milk)

-1 small beet

-1/2 cup frozen strawberries

-1/2 ripe banana

-1 T raw cacao nibs (or 1 t cocoa powder) - more to garnish

-1 t raw honey (optional)

-Coconut and mint for garnish (optional)
